How long have you been blogging and why did you start?
I’ve been blogging on and off for about 3 years. I started when I went part time at my chef job. I found that I had more time on my hands and wanted to start cooking things that were more for everyday cooking and eating. When you work in a Michelin star kitchen, there’s not a lot of room for your own creativity to shine through. The recipes you make in kitchens like that are tested so many times before they make it to a menu and once on the menu, there’s not a lot of deviation from the recipe.
Do you have a secret recipe you aren’t willing to share?
Nope. It’s all up for grabs! I love sharing recipes and cooking for other people and a lifetime doesn’t seem long enough to share it all.
If you were stranded on a desert island with only one food, what would you choose?
AH! This may be one of the most difficult questions I’ve ever been asked! I wish I could class Italian food as the one food. That being said, probably pasta. It’s just so versatile.
How did you come up with your blog’s name?
Hmmm. I’m not sure really. I just wanted something that was natural and punchy and ingredient focused. My style of cooking focuses on whole ingredients that are brought together with unusual combinations and have a punch to them. So I wanted a name that reflected the gentleness of whole food (mint) but with some punch (salted).
What are you passionate about besides food?
In all honesty, everything in my world revolves around the food. My second love is graphic design and if I weren’t a chef, I’d be a graphic designer, so I’m having a lot of fun right now trying to channel my creativity into creating and designing cookbooks.
What is your favorite food to make?
It completely depends on the season. In the winter it’s gotta be some braised short rib ragu and in the summer, something like a pavlova loaded with fresh cream and summer fruits. And every season my husband hears the statement “this is my favourite season! I love (insert current season)!
What is your favorite thing to order when you are out to eat?
I tend to order fish when I’m out to eat. In the UK, restaurants seem to have access to better quality fish than you would find in the supermarket. So, when we’re out, I gotta have some fresh grilled cod or some monkfish.

What are some of your favorite recipes on your blog?
I make the pizza dough all the time and the Hearty White Bean Minestrone

What is your favorite thing about blogging?
So many things really. I love recipe development so much. The freedom and creativity to pair flavours and textures to create something that turns into a family classic. But my absolute favourite thing is when people make the recipes and tell me how much their family loved it, or when people tell me what they changed to make the recipe fit into their own style or tastes… or sometimes just based on what they’ve got in the fridge.
