Behind the Blog Blogger Spotlight: Daily Dish Recipes

Meet Nicole from Daily Dish Recipes. I’ve known Nicole only about a year but we became fast friends. She always has a kind word and is forever laughing, which is contagious. As with many of my blogger friends I wish she lived closer. I hope you enjoy getting to know Nicole and find the opportunity to visit her blog.

How did you come up with your blog’s name?

Back in the day I had a website devoted to crafts and recipes and my day job was a journalist. When trying to choose a name for my blog, I wanted something that sounded magazine like, and I kept going to “The Daily Dish”. But I wanted it to be clear at a glance that it was recipes, and so I dropped the “The” and added “Recipes” and Daily Dish Recipes was born.

 

How long have you been blogging and why did you start?

I have had a website on the Internet since 1994. In 1998 I began focusing on food. After a couple of tries at blogs on many now defunct weblog services, Daily Dish Recipes as a blog was created in April of 2009. It took almost a year to migrate all of the recipes from my original website to the blog. I started blogging because I was a writer, and I wrote for many major online publications. I started focusing on food in 1998 and the natural transition was to offer my own site with recipes. I turned to a blog eventually because the ease of updating a blog was a far cry from writing HTML back then.

 

Do you have a secret recipe you aren’t willing to share?

Yes. When you search my blog, you will find a traditional recipe for Texas Sheet Cake. Even with minor tweaks. It’s delicious. But it is not the way we make it. My mother tweaked the recipe 40+ years ago and I still make it the way she does. I’m not even sure why I won’t share it, but it’s just one of those recipes that I like keeping the secret of how we make it taste like that.

 

Is there a favorite cuisine you like to cook at home?

I’m a pretty down home, comfort food kinda gal and so I like making my family food that warms the soul. That’s what I focus on most.

 

What are you passionate about besides food?

Outdoor nature photography is my other passion. I am an outdoorsy girl, love the woods, the river, lakes and streams. Love old and/or dilapidated buildings. I love filling my walls with beautiful photographs of places we’ve been. I love photographs that evoke an emotion or make you wonder what is just beyond that dirt road, or behind that gate. We live in Missouri and have some pretty incredible secret spots that have landed some breathtaking photographs.

 

How often do you usually eat out and where do you tend to go?

We don’t eat out too often. I prefer a home cooked meal over a restaurant meal, but that isn’t to say we don’t enjoy a great meal out. When we do go out, we tend to try to find places we’ve never been before. While we definitely go back to a restaurant more than once, we do enjoy the exploration of finding and adventure of eating at somewhere new. The only place we go frequently, is Sushi and that’s because I have a bit of an addiction.

 

What is your favorite thing to order when you are out to eat?

It all depends on where we are eating. If it’s a bar and grill style restaurant, there’s nothing like a big juicy cheeseburger – I tend to lean towards spicy burgers. But at most restaurants I tend to lean towards anything seafood. I adore seafood. And Sushi.

 

Who are some of your favorite bloggers?

One of my absolute favorite bloggers is Christy Jordan from Southern Plate. She’s been blogging for as long as I have and I adore her personality, her blog and her giving heart. She’s my idol for sure. Another absolute favorite is Amanda Rettke from iambaker . She is incredibly down to earth, one of the funniest people I have ever met, she inspires, she teaches, she is incredibly giving. I adore Amanda. I could keep naming blogs but honestly, food blogging is full of so many wonderful, talented people, I’m sure I’d accidentally leave someone out.

 

What are some of your favorite recipes on your blog?

For mealtime: I’m really into lighter meals lately, so I am loving these Fish Tacos with Baja Cream Sauce. They  are a favorite quick meal and my whole family absolutely loves them. Second choice is a toss up between Bacon Caprese Stuffed Portobello Mushrooms and this super simple Shrimp Scampi Pasta.

To end the meal, as far as desserts go – our favorites are these Key Lime Margarita Cupcakes. I make them for gatherings all the time because everyone asks for them. I also adore this Ghirardelli Flourless Chocolate Cake – it’s easy and everyone loves it! Ok, so I really just love food in general and it’s hard for me to only pick a couple of favorites. Sorry!

 

What is your favorite thing about blogging?

I think my favorite things about blogging is the creativity it evokes. It gives me an outlet, it’s introduced me to some of the best friends I’ve ever known and is a great place for me to share my passion of food, recipes and cooking.

    This is an interesting interview. Blogging since as far back as 94 o my goodness you are definitely a pro. I would love to learn from you. I would definitely give the Texan sheet cake recipe on your blog and just drool and wonder what the secret one is 😉😉
