Hi! I’m Ellen from Family Around the Table and I’m excited to share a guest post here on Yumgoggle. When my friend Carlee asked me I was flattered and set to thinking about a recipe. This post is nothing like my original idea. I was thinking breakfast because my family loves muffins, scones and coffee cakes and, frankly, I like making them. But ideas evolve and we love desserts about as much as we love breakfast.
So, I love peanut butter. Really, anything peanut butter. I have for as long as I can remember. As a child I always insisted we leave Santa a peanut butter sandwich because I loved it so much. Plus, Santa needed something other than cookies, so I thought. When I reconnected with my elementary school best friend on Facebook a few years back, one of the first things she asked me was if I still ate peanut butter sandwiches. Of course the answer was yes.
I come by my love of peanut butter naturally. My Dad loved it too. He used to make me “pocketbook” sandwiches. That’s where you spread peanut butter on one half of a slice of bread then fold it over, don’t cut it, just fold it. Hence, pocketbook. They were (and still are) the best sandwiches. To me, you can’t have a sandwich without chips. My brother turned me on to putting chips inside the peanut butter sandwich. Yes, sounds crazy but it works.
While trying to decide on a recipe for this post, I was looking through my Mom’s recipes as I often do. That is when I came across this chocolate peanut butter Bundt cake. I have no idea why I had never seen it before or why I don’t ever remember her making it. Her version just had a dusting of confectioners’ sugar but I thought the cake needed something more. A peanut butter glaze would do the trick. My family will tell you I’m the queen of glazing. Just about everything can use a glaze.
Unfortunately my family doesn’t enjoy peanut butter as much as I do but that doesn’t stop me. I always have a couple of jars in my pantry plus a few bags of peanut butter chips. I never know when I’ll want to make something. So, if you enjoy peanut butter, I hope you’ll enjoy this Bundt cake.

Chocolate Peanut Butter Bundt Cake with Peanut Butter Glaze

INGREDIENTS:
Cake
- 1 ¾ cups sugar
- ⅓ cup butter, softened
- 2 eggs
- 2 ½ cups flour
- 1 cup buttermilk
- 1 cup peanut butter chips
- ½ cup cocoa
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- ¾ teaspoon salt
Peanut Butter Glaze
- 1 cup sifted confectioners’ sugar
- 2 tablespoons creamy peanut butter
- 2 – 3 tablespoons milk
INSTRUCTIONS
Cake
- Heat oven to 325 degrees F. Grease and flour a 12 cup Bundt pan. Set aside.
- In a large mixing bowl mix sugar, butter and eggs until light and fluffy. Add all remaining ingredients and mix well. Spoon into prepared pan.
- Bake at 325 degrees F. for 50 to 55 minutes or until a toothpick inserted near center comes out clean. Cool 10 minutes and then remove from pan to cool completely on a wire rack.
- Once cool, drizzle with peanut butter glaze.
Glaze
- In a medium bowl mix the confectioners’ sugar and peanut butter. Gradually add milk until drizzling consistency. Mix until smooth and drizzle over Bundt cake.
