If you’ve read many of my posts, you’ll know how much I adore fudge – both making it and eating it. Fudge makes a fairly regular appearance on my blog. The cheats kind of course, aka super-easy to make.
So, one day, I’m sitting there brainstorming peppermint ideas (I know, I live on the edge) and I started wondering if coconut and peppermint would be a nice combination. Wrapped in chocolate, of course! Sounds pretty good to me. Somewhere along the line fudge got involved (you can thank me later).
Once an idea hits me, it’s battle stations! When can I make it? Have I got the ingredients? Will I have time to take photos? Must. Make. This. Now….
The first thing my ever-supportive hubby did was make the inspired suggestion of adding a cookie base to the recipe (totally a food bloggers husband). Love it! Did it! The chocolate cookie base adds a nice bite to the otherwise soft candy bar.
The second thing he did was grab his car keys and make a mad dash to the shop the moment he heard “Nooooooo! I have no peppermint extract left”. I’m not a very patient person, so waiting until the next day would have been torture and he’s a good man.
So, what are Coconut & White Chocolate Peppermint Fudge exactly?
- A base layer of chocolate cookie – literally just cookie crumbs and butter
- A layer of white chocolate peppermint fudge – aka easy, fool-proof, my favourite kind
- A layer of peppermint coconut ice – you know like a Bounty bar but peppermint flavour
- All coated in milk chocolate with a final drizzle of dark chocolate
And best of all
- No-bake, ridiculously easy and sublimely dee-lish-us!
I encourage you to use extract, rather than essence. Firstly, essence is a man-made flavouring so not natural and secondly, the flavour is much, much better.
Forks at the ready
Coating them in chocolate was messy fun too, once I worked out how to do it without getting it all over me (2 forks. Who knew???). Also, I worked out it was easier to use more chocolate than was actually needed (see the recipe notes for more).
I know this recipe may look like a lot of work being 3 layers and all, but I promise each step take only a few minutes to make. It takes a little while to set but in my book, that’s the perfect opportunity to catch up on some reading with a nice cuppa.
