Simple recipes are my go-to during the week. After making this vegetarian dish a few times, my family declared it needed meat! So, we’ve tweaked it a bit and added andouille sausage and other vegetables to kick it up a bit. We usually add broccoli, mushrooms, carrots and bell peppers. The recipe calls for canned tomatoes but sometimes we use fresh tomatoes and chicken stock for the broth instead.
